So my niece is obviously related to me!  Do you know what her sweet little soul brought me on her visit?  A cute jar of homemade pesto. What a thoughtful gift! Bringing food to her auntie?!   She knows me all too well.  Randomly the recipe she used is from Barefoot Contessa (great minds think alike)!  The pesto recipe is below and it is delish.

Pesto

Ingredients

  • 1/4 cup walnuts
  • 1/4 cup pine nuts
  • 3 tablespoons chopped garlic (9 cloves)
  • 5 cups fresh basil leaves, packed
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 1/2 cups good olive oil
  • 1 cup freshly grated Parmesan

Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

I decided to use her homemade pesto and concoct a little appie out of it.  I’m a fan of salty and sweet co-mingling.  I thought the brie, pesto and pear would be perfect together for that reason (and they sure were!)

Pesto, Brie & Pear Coulis Crostini

Ingredients

  • Baguette sliced
  • Prepared pesto
  • 1/4 cup olive oil
  • Brie
  • 2 pears
  • 1/4 cup sugar
  • 1/2 cup water
  • 2 tbsp cornstarch

Preheat oven to 450°.  To make coulis chop both pears. Add them to a saucepan with the sugar and water and boil for about 5 minutes.  Mix cornstarch with about 2 tablespoons of water and add to the pear mixture, stirring for a minute.  Brush olive oil on both sides of baguette slices and place on a cookie sheet.  Heat in the oven for 5 minutes, turning once halfway through cooking.  Spread each slice generously with pesto, top with brie and bake until the brie melts. Finish by placing 1 teaspoon of pear coulis on each crostini.

I forgot to mention that my niece’s softball team won their tournament while they were in town.  WooHoo!!
