When life gives you over-ripe nanners….make some nanner bread!  Those that know me know that I don’t like to waste.  It’s kind of a joke with my co-workers.  I will attempt to eat food out of the fridge and freezer that have expired, and to others may be questionable.  I just don’t like throwing money/food away.  There are starving people all over the place – sheesh! 

Banana Pudding Bread

So I had about 3 browning nanners and some instant sugar free vanilla pudding that’s just been sitting in the pantry.  I found this recipe online at Razzle Dazzle Recipes(click on the link for the recipe) and added a 1/2 teaspoon of vanilla extract and a dash of cinnamon to the recipe.  I took it out at about 45/50 minutes because my oven tends to over bake items.

This bread came out so moist and not overly sweet.  It tastes almost like if you could slice a piece of bread pudding, very dense and delicious.  Husband had a wonderful idea for the leftover bread (because hey, why not make something fattening even more fattening?!) so the next day he pan fried 2 slices in butter so it made it just a bit crispy on the outside, and soaked up the lovely butter. (Plus butter makes everything better.  Duh!).
