Spiced Pecan Pumpkin Bread

Spiced Pecan Pumpkin Bread

First of all….Happy Halloweenie! We took a little excursion to the pumpkin patch yesterday with our furry child CJ. Apparently dogs aren’t allowed at this pumpkin patch, and we were later told that there are signs (which we did not see (I’m not lying, we both totally missed the signs)). So I guess one of the reasons that dogs aren’t allowed at the ol’ pumpkin patch is because they excite the farm animals (this special spot had a farm animal section with lamas, goats and chickens)…..I guess me running back and forth along side the fence, with CJ, so the farm animals would chase us was funny only to husband and myself. Kill joy farm owner guy didn’t appreciate the jolly good time we were having so he put the kabosh on fun time, and CJ got thrown out da club. Sigh. In any event, I was slightly embarrassed, so we quickly purchased our large pumpkin and went on our way. I carved up that monster last night. It’s out on the doorstep right now. Why? I’m not sure. Since we’ve lived here we’ve never once had a trick-or-treater….yet my candy is ready, pumpkin is lit, outdoor light is on….where are my trick-or-treater peeps?!?!

I believe I’ve mentioned before just how much I hate shopping. The thought of the mall gives me anxiety. However, a few weekends ago I just couldn’t take it any more. I needed a few things, so I gave myself a little pep talk, and went to the mall right when it opened (as I always do). Before I could actually make it to any store in which I NEEDED items, the smell that was permeating from the damn William Sonoma store stopped me dead in my tracks. It was like pumpkinie, ciderie, baked goodness. I turned quickly and b-lined it into the store. Oh so many wonderful things are in that store. Focus. Needed to buy one delicious item and leave so I could stay strong and get my shop on. Found it. Spiced Pecan Pumpkin Bread and Pecan Pumpkin Butter ….and I was out. So last night I thought I MUST bring something to the co-workers to spice up this Halloween (since I knew we’d all have a case of the Moodays). So I made the super easy bread (you just add water, eggs and butter) and rolled with a cream cheese frosting. For the frosting I took a package of cream cheese (room temp) added 1/2 a stick of softened butter, 1 1/2 cups of powdered sugar and 1/2 a cup of the Pecan Pumpkin Butter and mixed it up with a mixer. The bread came out good, we all got a nice am sugar rush, and it made my case of the Moonday’s not so bad. I would strongly suggest serving this over the Thanksgiving weekend if you happen to have guests over. It’s a lovely way to start the morning and goes great with a cup o joe. Plus you’ll look like a super rock star that slaved in the kitchen!
