Chicken Larb Lettuce Cups

Ugggg…..  I don’t know about you but the holiday season always weighs me down.  It’s like clockwork, Halloween comes and all of the sudden I turn in a human garbage disposal.  I’m not kidding you, I have pretty darn good willpower all throughout the year and then BAM – downhill.  I’m not HUGE on sweets but at work we have this treat table and during the holidays it just calls to me.  Sees candies at 9am after I’ve had my healthy yogurt?  Don’t mind if I do.  Homemade cookies at 10am?  Well someone put a lot of sweat into them, so heck, I may as well not be rude!  Down the hatch.  If I told you what I ingested yesterday, you would be appalled.  I’ve been known for my ability to throw down some massive quantities of food, but yesterday was just embarrassing, so much so that I refuse to share.  So I woke up this morning knowing even though Christmas is just around the corner, I really need to start reigning it in ASAP.  I’m feeling like a sluggish unhealthy piece of poop.  So I’ve decided to try and eat a bit healthy this weekend so I can pick back up and ingest massive amounts of holiday fare over the next 2 weeks.  Ha!  Ha!

Anyhow, I was reminded of the fresh larb dish we had pre-holidays and I’m thinking that would be a great dinner option for the weekend.  Do you know what Larb is?  I had never heard of this larb until probably about a year ago from my pal Christine at work.  It’s a ground chicken salad, with a fish sauce dressing.  Ok, don’t let my description deceive you, I promise it’s amazing.  Thai food is huge around these parts, and you are sure to find larb at any good Thai restaraunt you go to.  Husband and I love it.  I decided to make it at home one night (find link to recipe below), but thought it would be fun to make it into lettuce cups.  So I made the recipe as is (with ground chicken, minus the arugula/used chopped cashews instead, and minus toasted rice), but served it in butter lettuce leaves…. so good!    It makes a wonderfully light and refreshing meal.  So maybe you would like to join me this weekend in trying to eat healthy before we pick back up and become gluten’s once again!
