I get a craving for fried chicken exactly once per year, and that’s on the 4th of July.  So while everyone is thinking about burgers and hot diggity dogs, I want crispy chicken, potato salad and peach cobbler.  I told husband this.  He started whining about the unhealthiness of this menu (I think he was secretly scared that I would eat yet another cobbler all to myself.  Whatever.)  SSSSoooooo…..I caved and opted for a healthy version of the meal.  I did crispy oven baked chicken (made with Bisquick, recipe is on the box), adult potato salad I couldn’t find a potato salad recipe that I liked so I made up my own.and corn on the cob.  No dessert.  Damn it. 

Roasted Potato Salad

Roasted Potato Salad

Ingredients

  • 2 lb. baby red potatoes halved and quartered
  • 2 tablespoons olive oil
  • 1/4 cup light sour cream
  • 1/4 cup light mayo
  • 1 tablespoon white vinegar
  • 1 tablespoon Dijon
  • 2 tablespoons lemon juice
  • 1/2 teaspoon paprika
  • 1 teaspoon hot sauce
  • 3 tablespoons dill
  • 1/4 cup chopped kalamata olives
  • 3 chopped sweet pickles
  • 5 chopped boiled eggs (I only used 1 whole egg, and the rest egg whites)
  • Salt and pepper to taste

Preheat oven to 450°.  Toss the potatoes with olive oil and salt and pepper.  Roast for about 25 minutes, tossing in between.  While the potatoes cook mix together sour cream through hot sauce to make the dressing.  After the potatoes are out of the oven mix into the dressing and add the rest of the ingredients.  Use the salt and pepper to your liking.  Chill in the fridge and enjoy!

Oven Baked Chicken

Ingredients

  • 2 chicken breasts (bone in/skin on)
  • 1/2 tablespoon butter
  • 1/3 cup bisquick
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon pepper

Heat oven to 425°.  Melt butter in a 13×9 inch glass baking dish in the oven.  Stir together Bisquick , paprika,x salt, Italian seasoning and pepper; coat chicken.  Place skin side down in the heated dish.  Bake 35 minutes.  Turn chicken; bake about 15 minutes longer until juice of chicken is clear and registers 170.
