Thanksgiving Leftover Hash

I hope you had a lovely Thanksgiving weekend.  I can’t believe it’s already come and gone again…sigh….it is my most FAVE holiday….I wish we could do it a few times a year.  I mean you get to graze all day long on deliciously comforting food, the boys get to watch football and drink beer all day, and you get leftovers to carry you through the rest of the week. The grazing has gotten me into trouble in the past.  I remember one year telling my dad that we may need to go to the hospital to have my stomach pumped.  I was the product of massive turkey and fixins consumption.  Needless to say, I didn’t overdose on Thanksgiving, I made it through, lived to see many more Thanksgivings, and I’ve never let the experience stop me from loading up the ol’ plate.

Even though we live here in WaWa all on our own, I couldn’t see Thanksgiving passing us by without the full traditional meal.  So I began cooking on Wednesday afternoon through to Thursday evening (of course I slept and showered in-between those times).  Needless to say, I was so busy, exhausted and hungry that I didn’t even think of the blog people.  Yes, I thought of myself and my hunger pains.   Our friends came over and we shared a fabulous meal but when all was said and done I thought good Lord, I didn’t photograph any of the dishes.  Ugggg…..  I was disappointed for a bit BUT the next morning I had the best idea for leftovers, so I took a picture of that and thought I’d share.

This Sausage, Apple and Fennel Corn Bread Stuffing is my traditional stuffing go to.  I just can’t see ever trying another recipe for stuffing.  I’ve cooked it now for a few years, and I always get compliments.  I got it out of a Cooking Light magazine, and it’s just perfect (see recipe by clicking this link).

So the morning after Thanksgiving I headed to the gym to try and feel a little less guilty about gorging myself the day before.  I had an amazing workout and felt healthy and refreshed, but wouldn’t you know on the way home I started fantasizing about Thanksgiving leftovers?!?  When I got home (like literally as soon as I walked through the door) I took the stuffing, mixed it with some leftover candied yams, warmed it up, topped it with a fried egg and poured some warmed up leftover gravy on top.  Let me tell you what kittens…..it was the best Thanksgiving leftover treat I’ve ever had.  Purely amazing naughtiness.  I loved it so much I had it 2 mornings in a row.  So this year marked the year of a new tradition:  Thanksgiving Leftover Hash.  Try it next year for sure!
