We had dinner over at a friend’s house a few weeks ago and she had a full spread of spring roll fixins.  So we all sat down and made our own spring rolls.  It was really fun!  I always order spring rolls when we get Thai food and I never once thought to make them myself.  Man, they are so easy and healthy.  For me, I think this is a perfect week night meal for a family.  Mom (or dad) can roast some shrimp and you just put everything on a platter so all can dig in.  Also, put a dish of warm water on the table so you can soften the spring roll skin as you go.  Then stack away! Easy breezy beautiful……

Spring Roll IngredientsUse whatever ingredients you would like but below is a list of what we used (and the order in which we stacked them).  Also, I would have used sliced cucumber instead of zucchini BUT we happened to have some zucchini we needed to use up so that’s the route we went.  Our usual grocery store didn’t have the spring roll skin so we picked up ours at the new local Asian market Uwajimaya (it’s like an Asian food market on steroids).  Enjoy!

  • Spring Roll Skin
  • 2 bunches bean thread noodles (or whichever noodles you prefer)
  • 2 large grated carrots
  • 2 grated zucchini (again, I would have used sliced cucumber here)
  • 1 bunch of mint
  • Bean sprouts
  • Butter lettuce
  • 1 lb roasted shrimp
  • Hoisin sauce for dipping
