I’m not sure if there is a more comforting, healthy, yet stick to your ribs kind of breakfast like some good ol’ steel cut oatmeal.  The problem is, who the heck has time to whip up a bowl of it during the week?!  Not I.  So on occasion I’ll make it for us on the weekend.  I’ll lay out some brown sugar, mixed dried fruit and some chopped nuts for a little oatmeal bar action.  This would be great to serve when you have company in town.

I’ve used the below Steel Cut Oatmeal recipe from Alton Brown before……with all the naughtiness it entails and it’s creamy and delicious.  In an effort to make mine a bit healthier, for the last 10 minutes of cooking I used 1/2 cup skim milk instead of the whole milk and buttermilk and it tastes just as silky and delicious.  I also allow my oats to cook for the entire cooking time with a whole cinnamon stick in it.  Yummmm……now I’m fueled and ready to start my Sunday!
