Neener….neener……husband caught me a steelhead fish AND grilled it too.  Yes ladies, you read that correct.  My man strong, he hunt fish, he make fire.  I have the bestest husband in the world!!  So, because he caught mommy such a nice sized fish we were left with some leftovers.  I love steelhead, but have never been a fan of leftover fish.  I KNEW we were going to finish eating it up because  I didn’t want to do it any injustice and just plop it in the microwave.  Then it came to me.  Steelhead Cobb Salad.  What, the what?!?!  Yes.  Glorious Steelhead Cobb Salad.  This should be on the menu of many Northwest restaurants.  It probably will go down as one of the most well put together salads I’ve ever had, and I made it myself!  I bit the fresh dill dressing from a blog called My Man’s Belly.  It’s a hilarious.  She basically states that the way to a man’s heart is through his belly.  Total truth ladies.  Here is the link to the dressing from the blog:  Fresh Dill Salad Dressing

The recipe is pretty self explanatory (from the picture) I used romaine, crumbled gorgonzola, crispy piggy pieces, 2 chopped boiled eggs, 1 diced avacado, split cherry tomatoes, diced cucumber.  Top with the steelhead (or leftover fish of your choice) dressing as well as some capers.  Wam bam thank you ma’am.  Super easy, refreshing and D’Lish!
