Blue Cheese and Apple Slaw

Blue Cheese and Apple Slaw

Welp kids….it’s about that time…..about the time that summer comes to an end.  Why does it go so quickly?  Why is my grocery store already selling Halloween decor and when did it start getting dark earlier?  Ho hum.  How about we enjoy the last of these glorious days while we can, and BBQ as much as possible?!  If you are looking for a yummy side for your Q’ing, how about some d’lish coleslaw?  I’m not a huge fan of the slaw.  I think it’s Borrrrring with a capital “B”.  So I had a brilliant idea, Blue Cheese and Apple Coleslaw.  Duh.  Well, of course my brilliant idea already existed.

I found this recipe from Food Network Canada.  Ummmm….did you know that Canada had a special Food Network?  I really had no idea.  I tell ya, you learn something new every day folks, isn’t that just one of the special things about life?!  So anyhow, now at least I have a slaw recipe to add to the recipe book since one hadn’t previously existed.  Now make your man get out there and grill you up some meat, and ladies…..get to gettin’ and make yo man some slaw!  WoopWoop!

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons lemon juice
  • 3 tablespoons prepared horseradish, drained
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cabbage, finely shredded (about 2 pounds)
  • 1 cup diced tart apple
  • 4 green onions, chopped
  • 1/2 cup blue cheese, crumbled

Mix together mayonnaise and sour cream. Add lemon juice, horseradish, sugar and salt. Pour and toss dressing with cabbage, apples, green onions and blue cheese. Refrigerate for least 30 minutes.
